CHILLI BEAN HALLOUMI RICE BOWL

Ingredients:

  • 60g Mixed basmati rice
  • 1/2 tin of mixed beans in chilli sauce
  • 2 handfuls baby spinach
  • 1/2 mashed avocado
  • 3 slices of halloumi cheese

Method:

  1. Boil your kettle & add the water to a saucepan. Add your rice and cook on a gently simmer for 25 mins.
  2. Drain the rice with a sieve and add the tinned beans and the drained rice back into the original saucepan with the spinach for a few minutes.
  3. Fry the halloumi gently in a separate pan and serve on top
