CHILLI BEAN HALLOUMI RICE BOWL
- 60g Mixed basmati rice
- 1/2 tin of mixed beans in chilli sauce
- 2 handfuls baby spinach
- 1/2 mashed avocado
- 3 slices of halloumi cheese
- Boil your kettle & add the water to a saucepan. Add your rice and cook on a gently simmer for 25 mins.
- Drain the rice with a sieve and add the tinned beans and the drained rice back into the original saucepan with the spinach for a few minutes.
- Fry the halloumi gently in a separate pan and serve on top
